Rosso Saverio is made from a mix of many red grape varieties, all fermenting together—a traditional, ancient field blend from the island. The main varieties include Sangioveses, Grenaches, Malvasias, Moscato Neros, Trebbianos, Vermentino Neros, and a few others in smaller quantities. The grapes are harvested at different stages of ripeness and left to rest in the shade, dehydrating slightly. Once ready, they’re crushed together and fermented whole, skins and stems included.
